This quick and easy side dish brims with seasonal flavors. It's a quick and easy sauté that goes well with roast chicken, fish or even over a bed of greens.

Ingredients

  • 1 tablespoon olive oil
  • 2 lbs medium zucchini, about 4-5, sliced
  • 1 large red bell pepper, ribs and seeds removed, sliced
  • 2 medium Poblano chiles, seeds removed, sliced
  • 1 small onion, sliced
  • 3 garlic cloves, chopped
  • 1 tablespoon fajita seasoning mix
  • Salt and pepper, to taste

Directions

    Heat the oil in a large skillet over medium-high heat.

    Add the zucchini, bell pepper, poblano chiles, onion, garlic and fajita seasoning.

    Sauté, stirring often until vegetables are tender, but still crisp, about 5-7 minutes.

    Season with salt and pepper to taste.

    Serve immediately.

Expert Tips

    Instead of Poblano chiles, you can use Anaheim chiles or double up on the bell peppers.
