Ingredients

  • 2 teaspoons olive oil
  • 1 stalk lemongrass, thinly sliced (white bulb only)
  • 1/2 medium onion, diced
  • 2 garlic cloves, minced
  • 1 12-oz bag frozen sweet peas, thawed
  • 1/4 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1/4 teaspoon ground cumin

Directions

    Heat oil in a nonstick skillet over medium high heat.

    Sauté lemongrass, onions, and garlic until tender and translucent; about 3 minutes. Add in peas, sauté 1 additional minute and add chicken broth.

    Reduce heat to simmer, season with salt, pepper, and cumin.

    Cook for 5 minutes, stirring occasionally. Serve warm.
