Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium white onion, finely chopped
  • 1 yellow bell pepper, diced
  • 1 garlic clove, finely chopped
  • 3 cups green cabbage, cut into thin strips
  • 3 cups purple cabbage, cut into thin strips
  • 1 can (8 oz.) tomato puree
  • 2 lemons

Directions

    Heat the oil in a large casserole over medium-high heat. Sauté the onion and the yellow bell pepper for 2 to 3 minutes until the onion is translucent. Add garlic and sauté for another 30 seconds.

    Add green and purple cabbage; sauté for 5 minutes, stirring occasionally.

    Add the tomato puree and the juice of 2 lemons. Season with salt and black pepper, to taste.

    Cover casserole and reduce to low heat. Cook for 12 to 15 minutes or until the cabbage is completely cooked.
