When I was little, there was nothing more delightful than a movies day spent in front of the big screen with a bag of pistachios. As an adult, I keep a stash in my pantry and use pistachios in my ice cream to make desserts and incorporate in different salty dishes and salads. Join me in preparing a green bean dish with gremolata, which I have whipped up using my favorite, colorful and crunchy ingredient: the pistachio. Garlic, parsley, olive oil and Parmesan cheese enter into the tasty mix of flavors. This dish is bound to be a hit with your family; it pairs perfectly with different meats, fish and chicken. The saying goes “barriga llena, corazón contento;” in this case, this dish not only makes for a happy heart, but it also adds some greens to your dinner spread!

Ingredients

  • 1 lb green beans
  • 3 tablespoons pistachios, shelled and toasted
  • 2 garlic cloves, chopped
  • 1 tablespoon lime zest
  • 3 tablespoons Italian parsley, chopped
  • 3 tablespoons shredded Parmesan cheese
  • 2 tablespoons olive oil
  • Sea salt, to taste
  • Fresh ground pepper, to taste

    Wash and trim the green beans.

    Add water to a medium-sized pot and heat over medium heat to bring to a boil. While heating the water, in a separate, small frying pan, begin preparing the gremolata. First, toast the shelled pistachios for about 5 minutes over low heat.

    In a small, deep container, mix the chopped garlic, lime zest, parsley, Parmesan cheese and toasted pistachios. Set aside.

    Once the water is boiling, submerge the green beans for 3 minutes. This will cook the veggie and give the beans a crisp texture. Remove from heat and drain. Immediately transfer the beans to a bowl filled with ice water. This will quickly chill them and preserve their lovely, green color. Dry with a paper towel.

    In a medium-sized frying pan, heat 2 tablespoons of olive oil over medium heat. Incorporate the green beans and stir-fry them until they’re hot and coated with the oil, for approximately 2 minutes. Remove from heat and add the gremolata, stirring well.

    Season the dish with sea salt and fresh ground pepper, to taste.

    Serve hot, and enjoy!

    If you plan on using fresh green beans, I recommend cooking them the same day, or the day after you purchase them.

    If you'd rather cook the green beans in a microwave, microwave for no more than 8 minutes in an airtight container with 2 tablespoons of water.
