Ingredients

For the cream of garlic and cilantro

  • 1 tablespoon lemon juice
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic paste
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

For the artichokes:

  • 4 large artichokes
  • 1 lemon cut into quarters
  • 1/4 cup olive oil
  • 6 medium garlic cloves, minced, or 1/2 teaspoon garlic cream
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Directions

  •
    1
For the cream of garlic and cilantro: Combine all the ingredients in a food processor and process until achieving a creamy consistency. Set aside.
  •
    2
For the artichokes: Wash the artichokes with fresh water. Prepare water with lemon juice in a medium container. Cut the bases and tips of the artichokes and chop them lengthwise. With the help of a sharp knife, clean the furry part that is on the heart of the artichoke. Put the artichokes in the lemon water as you cut them to prevent them from turning black.
  •
    3
Meanwhile, boil water in a pot. Add the artichokes and let them cook for 15 minutes.
  •
    4
Turn on your oven. When the artichokes are ready, take them out and strain.
  •
    5
In a small mixing bowl, mix the olive oil, garlic, sea salt and pepper. With the help of a brush (preferably silicone) spread this mix over the artichokes.
  •
    6
Place them on the hot grill for about 10 minutes. Turn and brush them with the mixture occasionally.
  •
    7
Sprinkle with sea salt and serve hot with the sauce on the side.

Expert Tips

  • tip 1
Be sure that the artichokes are fresh with green tips.
  • tip 2
If you want to save time, prepare the sauce in advance and refrigerate in a container with a lid.
  • tip 3
You can also steam the artichokes. It will take longer, but it's just as effective. Then grill for 5 minutes on a very hot grill.
  • tip 4
Grab the artichokes with spatulas so that they don't fall apart.
