Ingredients

  • 1 pound spaghetti
  • 2 tablespoons olive oil
  • 1 (15 oz) can Progresso™ artichoke hearts, drained and diced
  • 1/2 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup cilantro, washed and chopped
  • Salt and pepper, to taste
  • Zest from a 1/2 lemon
  • Juice from 1/2 lemon
  • 1/4 cup grated parmesan cheese

Directions

    Cook pasta according to package directions and set aside 1 cup of cooking water.

    Heat the oil in a large non-stick skillet over medium-high heat.

    Sauté the artichokes, onions and garlic until the onion is light and translucent, about 4 minutes.

    Remove from heat and add to a blender or food processor, along with the chicken broth and cilantro.

    Blend until smooth, adding the reserved pasta water if needed.

    Return the sauce to the skillet and simmer on low. Season with salt and pepper to taste and add the pasta.

    Add lemon zest, lemon juice and parmesan cheese, toss to coat.

    Serve warm garnished with cilantro.
