Whole-Wheat Focaccia Bread

One of the things I find magical and fascinating in the kitchen, even if you and I have been cooking for years, is that there’s always something new to make or a new way to prepare it. I’ve always made this classic focaccia and it’s one of my favorite breads. This time around, I prepared it with a mix of all-purpose and whole-wheat flour to give it a more wholesome toque, and it turned out delicioso. Focaccia is a kind of Italian bread that belongs to a group of flat breads. It’s very easy to make. If you’ve never baked homemade bread, this is the per-fect recipe to get you started.

Ingredients

  • 2 cups Gold Medal™ All-Purpose Flour
  • 3/4 cup Gold Medal™ Whole Wheat Flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon active, dry yeast
  • 7 tablespoons olive oil
  • 1 cup water, at room temperature
  • 1/2 teaspoon dried oregano
  • Sea salt, to taste
  • 1/2 teaspoon dried basil

Directions

    Preheat the oven to 425°F.

    In a large bowl, mix the 2 flours, 1 teaspoon of salt, sugar and yeast. Add 3 tablespoons of the olive oil along with the 1 cup of water.

    Knead until the dough is soft and elastic. Lightly grease a large pan, set the dough in the pan and drizzle 3 additional tablespoons of oil over the top of the dough. Cover pan with a damp cloth and let rise in a warm place for 40 minutes.

    Punch the dough; put it in on a greased baking sheet. Mold the dough into a rectangle 1/2-in thick. Pour the remaining tablespoon of olive oil over the top. Sprinkle dough with oregano, sea salt and basil.

    Bake in hot oven for 15 minutes or until bread is golden-brown.

    You might also try adding toppings to the focaccia bread as if it were a pizza, using fresh tomatoes, basil or olives. I’m sure that any topping idea you try will be delicious.
