Turkey, Bacon and Watercress Sandwich

The watercress has only recently become trendy, despite being consumed since the XIII century and enjoyed for its peppered and refreshing flavor, as well as its beneficial properties. It’s usually used in salads, but today I want to share a simple sandwich recipe that’s perfect for a sunny spring afternoon.

Ingredients

  • 8 slices bacon
  • 1 can (4 oz) refrigerated Pillsbury™ Original Crescent Rolls (4 Count)
  • 1 bunch watercress, medium
  • 1 teaspoon balsamic vinegar
  • Dijon mustard, to taste
  • Mayonnaise, to taste (optional)
  • 1 tomato, washed and sliced
  • 1 pack of 8 oz sliced turkey

    Preheat the oven or toaster oven to 350°F.

    Fry the slices of bacon to taste (on the grill, stove or in the microwave – my personal favorite). I usually line a glass baking dish with paper towels and place the strips of bacon on top, then cover with another layer of paper towels and microwave for 3-4 minutes. The bacon comes out of the microwave crunchy and the paper towels absorb the oil.

    Place the dough in the oven.

    In the mean time, take 5-6 sprigs of watercress per sandwich, wash and dry with a paper towel. Combine with the balsamic vinegar and set aside.

    Remove the bread from the oven when it’s warm and crunchy. Add mustard and mayo to taste one half of each sandwich. Add a couple of tomatoes, turkey, 2 strips of bacon and finish with watercress.

    Serve with fresh fruits and a glass of water or lemonade.

    You can use turkey bacon instead of pork.
