Tuna Fish Torrejitas

When I'm on the prowl for a quick bite, craving something that tastes good and is easy to put together, I turn to these tuna tuna torrejitas. They're tasty, and when paired with a salad in the summer or steamed veggies in the winter, are both nourishing and energizing. To prepare a delicious, sabroso sandwich , try pairing this torrejita filling with pita bread and some greens. In this particular recipe I've substituted ground cracker or bread with Fiber One™ Original Cereal. I grind it up in the food processor so that my breading has the perfect texture, and these tasty torrejitas are ready in one half hour. You can prepare the torrejitas mix ahead of time and leave it in the fridge for a few hours so that, when you’re ready to serve or eat them, all you have to do is form the patties, bread, and then fry them up. You may also use fresh, baked or steamed fish. Simply shred the filet with a fork and add it to the mix.

Ingredients

  • 2 cans tuna, drained
  • 1/3 cup finely shredded carrot
  • 2 tablespoons chopped onion
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped green olives
  • 1/3 cup Fiber One™ Original Cereal, ground up (to make the torrejitas)
  • 1 egg
  • Salt and pepper, to taste
  • 1/2 cup Fiber One™ Cereal, ground up (for torrejita breading)
  • 3 tablespoons oil

Sides to serve with the torrejitas

  • Tomato salad
  • Lemon wedges
  • Cooked white rice

Directions

    In a bowl, combine the tuna, carrot, onion, parsley, olives, 1/3 cup of Fiber One™ Original Cereal, an egg, salt and pepper. Thoroughly stir and form 8 firm torrejitas, or patties, with the mix.

    Put the 1/3 cup of Fiber One™ Original Cereal on a plate. Press each torreja in the ground cereal mix to completely bread each one.

    Heat 3 tablespoons of oil in a frying pan over medium heat. Fry the torrejitas on both sides until golden brown, being careful not to burn them. Absorb excess oil by setting the fried torrejitas on a piece of paper towel.

    Serve 2 torrejitas per plate and accompany them with a small tomato salad, lemon wedges and white rice.
