Spicy Glazed Carrots

These glazed carrots go great with meat dishes, particularly when celebrating a special occasion. I like to serve them for Thanksgiving or for the holidays as a nice side to go along with the turkey. They are the perfect complement to the main dish. If you like spicy dishes, then add a touch more of chili powder. I like it with just the amount listed in the recipe but don’t be afraid to add more, if that’s your taste.

Ingredients

  • 3 large carrots
  • 3 tablespoons butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • Chopped parsley, to garnish

Directions

    Peel and cut carrots diagonally.

    In a pot, add water, a pinch of salt, bring to a boil and add carrots.

    Once they are tender, remove carrots from heat and set aside.

    In a separate pot, melt butter and add sugar.

    Add chili powder, salt and pepper.

    Check the seasoning and add more if needed.

    Combine carrots with this glaze.

    Garnish with parsley and serve immediately.
