Shrimp-Stuffed Yellow Peppers

I love fusion. It inspires me to create and think about all the combinations of ingredients, techniques and flavor, such as shrimp stuffed peppers. This got me thinking about making non-traditional stuffed peppers. Perhaps I would try it out with yellow Peruvian peppers instead of the typical Mexican chili peppers, and for the filling I would use shrimp and cheese. However, you can use whatever kind of pepper you have on hand. The beauty of a recipe like this is that it’s so versatile that you can adapt it to use whatever ingredients you have available. If you don’t have any chili peppers, try it with bell peppers, I’m sure the result will be delicious. These shrimp stuffed peppers are spectacular. I had thought about serving them with a side of tomato salsa but I’m making it optional. These stuffed peppers are juicy and delicious and they are so easy to make that I highly recommend them. Ingredients

  • 8 yellow peppers
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 1 garlic clove, chopped
  • 1 tablespoon cilantro, chopped
  • Sal and pepper, to taste
  • 1 lb shrimp, peeled and coarsely chopped
  • 1/2 cup cream cheese, softened
  • 3/4 cup Monterey Jack cheese, grated
  • Tomato sauce, to taste (optional)

Directions

    Make a cut along the side of each pepper. Use a spoon to remove the seeds and veins.

    Place peppers in a pot with cold water and bring to a boil. As soon as it starts to boil, remove the water and add cold water. Continue to boil until they are soft. Drain and rinse under cold water. Peel the peppers and set aside.

    Preheat oven to 350 °F.

    Heat the oil in a frying pan and sauté the onion for 3 minutes on medium-high heat.

    Add garlic and sauté for a few more minutes.

    Add cilantro, salt and pepper. Transfer to a mixing bowl and combine with shrimp and cheese. Stuff the peppers with 1 tablespoon of this mixture.

    Place the stuffed peppers on a baking dish and sprinkle each one with a little bit of grated cheese. Bake for 30 minutes or until they are golden and bubbly.

    Serve immediately. You can serve them with a side of tomato and cilantro salsa.

    For a more complete preparation, add 1/2 cup rice or cooked quinoa to the mixture of shrimp and cheese.

    For a spicier touch, don’t boil the peppers. Roast them and then peel them.
