Shrimp and Ancho Pepper Stir-Fry

Fresh shrimp cooked in onion, garlic and strips of ancho pepper combine beautifully in a tasty stir-fry. Dry ancho pepper isn't very spicy, but it does add a bit of earthy flavor that pairs wonderfully with the shrimp. What I love most about this shrimp stir-fry, besides the delicious flavor, is that is super quick and easy to prepare. Ingredients

  • 3 tablespoons olive oil
  • 2 lb. fresh shrimp, peeled and deveined
  • 1 medium onion, julienned
  • 1 clove garlic, finely chopped
  • 5 dried ancho peppers, stems and seeds

Directions

    Use your kitchen scissors or a sharp knife to cut the dry pepper into long and thin strips.

    Heat the olive oil in a large pot and cook over medium-high heat. Sauté the onion in the oil for 2-3 minutes.

    Add the garlic, shrimp and the strips of pepper. Season with salt and black pepper to taste. Sauté, stirring from time to time for 5 to 8 minutes, until the shrimp are completely cooked, remove from the heat.

    Cover the pot and let sit for 5 more minutes before serving. Serve with your favorite rice. Enjoy!

    For a seafood dish, you can add octopus and/or fish fillets to the shrimp.

    You can make the dish a little spicier with mashed chile de árbol.
