This last year seems to have flown by and Oktoberfest is upon us once again. Oktoberfest is a time of year to feast with German food and drink. It’s essentially a massive fair in honor of the month of October. There are plenty of fairs all around the world that join Germany in celebrating this time of the year. Here in Southern California, we have a few Oktoberfest festivals that have been happening for many years. They’re a lot of fun and are a super good excuse to indulge your more gluttonous side a little bit. I too like to rejoice and partake in this occasion by making my own sausage dish. I “Latinize” it a bit by adding plenty of yellow peppers (you can never have enough yellow peppers). It’s a very simple recipe that makes is easy to feed an army, which is what I have over at my place during this time when friends and family hear that I’m making this sausage and pepper dish. My crazy family likes to make tacos and burritos out of it. There aren’t any rules, really. Eat these sausages and peppers however you see fit, and be prepared for you palate and tummy to be very happy.

Ingredients

  • 2 tablespoons olive oil
  • 1 package Italian sausage
  • 1 onion, sliced
  • 1 yellow bell pepper, sliced
  • 2 garlic cloves, minced

Directions

    Place olive oil in a large frying pan over medium heat and allow oil to get hot.

    While oil is heating, use a paring knife to butterfly the sausages, lengthwise. Set aside.

    Add onion and yellow bell peppers to the pan and sauté in oil for 10 minutes. Push to one side of the pan to make room for the sausages.

    Cook sausages on all sides until done.

    Add minced garlic and cook for 1 additional minute.

    Serve and enjoy with a cold beverage!
