Ingredients

For the sauce:

  • 1 cup ripe mango, in chunks
  • 1 large tomato, in chunks
  • 1 jalapeño, no seeds, in chunks
  • 1 small red onion, finely chopped
  • 2 tablespoons cilantro, finely chopped
  • Juice of 1 lemon
  • Salt, to taste

For the burger:

  • 4 salmon filets (4 oz each)
  • Spinach, to taste
  • 4 hamburguer buns

Directions

    For the sauce: Mix mango, tomato, jalapeño, onion, cilantro, lemon juice and season with salt. Reserve in the fridge.

    For the burger: Season the salmon to taste. Grill them for 7-8 minutes on each side.

    Put a layer of spinach on one of the buns, place the salmon on top, put some salsa on and close with the other bun.

    Serve and enjoy!
