During spring and early summer, rhubarb is everywhere! The funny thing is that, being from Argentina, for me this veggie looks more like a blushing celery. Even my husband, who is American, says that rhubarb is from the north of the United States, and because he’s a southerner, he has never tasted this strange vegetable in his life… until now! Try your hand at this mojito, unlike any other you’ve ever had and yet so tasty and surprisingly gorgeous that it will have you on a wild hunt for rhubarb!

Ingredients

For simple syrup:

  • 1 1/2 cup rhubarb, chopped
  • 1 cup sugar
  • 1 cup water

For the mojito:

  • Ice
  • 1 1/2 cup Rhubarb simple syrup
  • 1 1/2 cup Rum
  • 18 mint leaves
  • 3 limes
  • 1 1/2 cup Club Soda
  • Splash of orange bitters (optional)

Directions

    First you will need to create the Rhubarb simple syrup. It's very easy: chop one and a half cup of rhubarb, add one cup of sugar and one cup of water. Boil until the waters looks syrupy, drain on a mason jar. Reserve in the fridge (it lasts up to 3 weeks!) This makes about one cup of syrup, multiply the measurements to make more if you are expecting to make lots of mojitos.

    Add ice (crushed, preferably), mint leaves (about 3 or 4), lime (about half) and one part of rum per two of syrup.

    Shake well or use a kitchen mortar inside the glass to mush the ingredients together.

    Add a bit more ice and club soda. Splash with orange bitters if you have some.

    You can use other fruits orange or strawberries to make simple syrup.

    You can increase or decrease the amount of rum or simple syrup, depending on your taste.
