This year, I don’t have very much time to spend in the kitchen cooking an elaborate Thanksgiving spread. That’s why, with a lot of research, I’ve developed recipes for a feast that will take half the time and effort than previous years. One of those dishes that will make its way to my holiday table is this sweet and savory plantain stuffing. It has the perfect balance of flavors that will complete and enhance all the elements of a Thanskgiving meal. It not only calls for few ingredients but two of those ingredients are plantains and bacon. Need I say more?

Ingredients

  • 4 plantains, peeled and chopped in thirds
  • 1/2 teaspoon salt
  • 1/4 lb bacon, chopped
  • 1/2 cup onion, finely chopped
  • 4 garlic cloves, finely chopped

Directions

    Place plantain pieces in a medium saucepan with enough water to cover. Add salt and bring to a boil. Cook until plantain pieces are soft; approximately 10-12 minutes. Drain and set aside to cool. When cooled, mash to a thick, chunky consistency.

    In a medium frying pan, cook bacon until it begins to brown. Add onion and garlic. Stir constantly and continue cooking for approximately 5 minutes. Remove and let cool slightly.

    Drain bacon grease and fold in mashed plantain. Transfer to a serving dish. Keep warm until ready to serve.

    Serve and enjoy!
