Ingredients

  • 16 oz bacon, diced
  • 1 medium onion, diced
  • 3 celery stalks, diced
  • 1 bell pepper, diced
  • 3 garlic cloves, diced
  • 4 green plantains, peeled and diced
  • 1/4 cup cranberry sauce
  • Salt and pepper, to taste

Directions

    In a large non-stick skillet over medium-high heat cook diced bacon until crisp. Remove cooked bacon; drain.

    Add diced onion, celery, bell pepper, garlic and plantains to pan and sauté until plantains are tender and golden brown and vegetables are tender, about 5-8 minutes.

    Remove from heat and mash plantain mixture with potato smasher. Stir in cooked bacon and cranberry sauce, season with salt and pepper and serve warm.

    For a spicier version; add 1 diced jalapeno when cooking plantains.
