Pasta salads are a great option when you need a quick dinner or lunch because there are so many varieties. Last week I prepared an orzo and chicken salad with cranberries and almonds. This recipe is incredibly delicious and very easy to prepare. What I like most is the perfect balance of sweet and savory.

Ingredients

  • 4 cups cooked and shredded chicken (about 4 breasts)
  • 2 cups orzo, cooked according to package directions
  • 1 cup dried cranberries
  • 1/2 cup sliced almonds, toasted
  • 3/4 cup mayonnaise
  • 5 tablespoons heavy cream
  • 1 teaspoon ground cumin
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons chopped flat-leaf parsley
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Directions

    Place the chicken, orzo, cranberries, almonds, mayo, cream, cumin, lemon juice, parsley, cilantro and pepper in a medium bowl. Stir with a fork until well combined.
