Volcanes (volcanoes) are tostadas with melted cheese that are prepared in the oven. After being baked, they are garnished with many different ingredients. The more ingredients you add, the more they begin to look like volcanoes on the verge of eruption, hence the name. Usually volcanes are served as a main dish for dinnertime, but if you serve it with fresh nopal salad, it also makes a great snack or appetizer at any family reunion.

Ingredients

  • 12 corn tortillas
  • 1 1/2 cups asadero cheese, grated
  • 1 jar (12-15 oz) nopales, drained and chopped
  • 3 Roma tomatoes, finely chopped
  • 1 serrano chile, finely chopped (optional)
  • 1/2 white onion, finely chopped
  • 1 bunch fresh cilantro, finely chopped
  • Hot sauce, to taste (optional)
  • Mexican cream, to taste (optional)

Directions

    Preheat the oven to 400°F.

    Grease two baking dishes with cooking spray. Place the tortillas on the dishes. Bake for 12-13 minutes, turning them after 6 minutes, until golden-brown.

    Sprinkle the asadero cheese on the tortillas. Bake for 2-3 more minutes or until the cheese is completely melted.

    In the meantime, prepare the salad by mixing the chopped nopales, tomatoes, onion and cilantro in a bowl. Season with salt and black pepper to taste.

    Remove the tostadas from the oven. Decorate each one with 3 or 4 tablespoons of the salad. Serve with your favorite spicy salsa or sour cream. Enjoy!
