Meatloaf with shrimp is one of those recipes that take you out of your comfort zone. It's surprisingly simple and delicious. Generally, I prepare meatloaf with vegetables, because it hadn't occurred to me to add a different meat or fish. A recipe I saw on television inspired me, so I decided to test out a different way to prepare this dish and here it is!

Ingredients

  • 1 pound ground beef
  • 1/2 onion, chopped finely
  • 1 egg, beaten
  • 1 pound shrimp
  • 1/2 cup of Progresso™ Italian-style bread crumbs
  • 1 cup from 1 bottle (9 oz) Old El Paso™ Mild Taco Sauce
  • 1/2 cup milk (optional)

Directions

    Preheat the oven to 425°F.

    Use your hands to mix the ground beef, onion, one egg and bread crumbs in a bowl until they are well combined. Add the shrimp and mix.

    Place the meat in a baking dish and add more shrimp if you like. Cover with aluminum foil and bake for around 25 minutes.

    5 minutes before removing it from the oven, add the sauce and cover. Bake again until the time is up.

    Once cooked, cut and serve.
