Mango Pudding with Flambéed Bananas

A few years ago I was having dinner at Roberto Cuadra, Cocina Peruana, my uncle's Peruvian restaurant in El Salvador. Even though his menu is predominantly Peruvian (and may I say, incredibly delicious), he always has a few other options in each category for those who want to try something different. That night, for example, he offered a banana foster for dessert. I had never tried it before that night, and my mom took a picture of my pleasure face eating the last bite of this flambéed dessert. Banana foster is definitely a good choice if you're looking for flambéed banana recipes. However, I've been off sugar for six months now, so I have created my own sugar-free pudding with flambéed bananas. Don't be discouraged by the fact that it’s sugar-free. Nature has given fruits like mangoes and bananas all the sweetness that even the person with the sweetest tooth (like me) could ever need. And this dessert is proof of it.

Ingredients

  • 1 very ripe mango
  • 1/4 cup chia seeds
  • 1/2 can light coconut milk
  • 4 pitted dates
  • 2 bananas cut in 1/2-inch slices
  • 1/2 cup tequila

Directions

    Peel the mango, and blend it with the coconut milk and dates, until smooth.

    Add the chia seeds and mix well with a spoon.

    Refrigerate for at least half an hour.

    Before you serve it, put the banana slices and tequila in a frying pan. Heat the tequila, then turn of the heat, and light a match. Carefully touch the tequila with the match to light it up, and let it burn until it turns off on its own.

    Serve the mango and chia pudding in shot glasses, and put 3 slices of flambéed banana on top.

Expert Tips

  • tip 1
    Use any liquor of your choice to flambé the bananas.
  • tip 2
    The longer your let this dessert sit in the fridge, the more water the chia will absorb, making the pudding thicker.
  • tip 3
    Be very careful when you flambé the bananas. It's hard to see the fire, especially during the day, so make sure your hair is tied up, and there's nothing flammable around it.
