Hummus with Caramelized Onions

Hummus is one of those blends I have to have on hand in my kitchen at all times, and I use it on everything! It’s a super versatile preparation that can be personalized using whatever I have on hand. One of my favorite versions is this hummus with caramelized onion, which adds a welcome touch of sweetness to the blend. For me, hummus is the perfect snack. A flavorful source of vegetable protein, thanks to the chickpeas, it’s tasty any time of the day. When you prepare it at home, you’ll notice that it’s not always as creamy or smooth as the hummus you buy at the supermarket, but that’s exactly what I like about it. Ingredients

To prepare the caramelized onions:

  • 2 tablespoons olive oil
  • 1 cup white onion, finely sliced
  • Salt, to taste
  • 2 tablespoons sugar

To prepare the hummus:

  • 2 cups cooked chickpeas
  • 2 garlic cloves, peeled
  • 1/3 cup tahini
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1/2 teaspoon cumin
  • 2 tablespoons olive oil
  • 1 pinch cayenne pepper

To serve:

  • Pita bread, cut in fourths
  • Red bell peppers, sliced
  • Black olives, to taste
  • Peas, to taste

    To prepare the caramelized onions: Heat the olive oil and add the onions to a frying pan. Cook them over low heat for about 15 minutes or until soft. Add salt and sugar. Continue cooking, stirring occasionally until golden. Don’t let them dry up. If you see that they are drying, add a tablespoon of water. Turn off the stove and set aside.

    To prepare the hummus: In a food processor, process the chickpeas with a few tablespoons of water (the same water you used to cook the chickpeas), the garlic, sesame seeds, lemon juice, salt, pepper, cumin and olive oil. Process until a smooth paste is formed. Taste to check the seasoning, adding more salt or lemon juice, to taste. Spoon half the caramelized onions into the hummus and mix.

    Transfer the hummus to a serving dish and garnish with the remaining onions, some olive oil and a little cayenne pepper.

    To serve: Serve with the pita triangles, bell peppers, olives, peas and more chickpeas, if desired.

    You can prepare the onions a day ahead of time and refrigerate them in a sealed container.

    In place of caramelized onions, add a clove of roasted garlic.
