Grilled Halibut and Spicy Hummus Wrap

A wrap is a similar to a burrito, made with wheat tortilla or pita bread and is either square or round in shape. Wraps can be made using a wide variety of fillings, but they typically include a protein, vegetables, avocado, and condiments such as mayonnaise, or various sauces depending on the style. Style varies by country, but wraps can be served hot or cold, sometimes with only cold cuts and cheese, other times with fish, seafood, lamb, or just vegetables. Creativity is key. You can make an appetizing and colorful combination. Wraps are often eaten at lunch as a very light meal, but you can also have them as a mid-morning or mid-afternoon snack. If you wish, you can serve a small salad on the side, but you don't really need it, since vegetables are almost always included in a wrap. This one includes hummus instead of mayonnaise or other sauces. You can make this wrap at home or buy it already prepared. If you buy it, I recommend that you enhance it with jalapeños and a bit of garlic. The flavor will be unbelievable.

Ingredients

  • 2 halibut fillets, cleaned
  • Salt and pepper
  • 1/2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 cup hummus (store bought)
  • 2 tablespoons chopped jalapeño peppers (optional)
  • 1 garlic clove
  • 2 wheat tortillas
  • Baby spinach
  • Avocado
  • Sprouts for serving

Directions

    Season the fish fillets with salt and pepper and marinate them in a mixture of olive oil and lemon juice for ten minutes. Cook the fish on the grill, about 4 minutes per side or until fully cooked. Cut into thick strips.

    Meanwhile, combine the hummus with the jalapeños and the garlic clove in the food processor, and process until thoroughly blended.

    Spread hummus on the wheat tortillas, cover with the spinach, and put the fish on top. Add bits of avocado, sprouts and roll up to form the wraps. Serve immediately.
