Jalapeño Grilled Cheese Sandwich

Since I moved to New York City over 2 years ago and discovered the amazing food truck offer, I’ve made it my job to try as many food trucks as I can. From the ones I’ve tried so far, my favorites are the ones where the simple grilled cheese sandwich is transformed into sophisticated creations with everything from champagne vinegar pickled onions and caramelized Granny Smith apples, to sautéed collard greens and corn chili butter. My many visits to these grilled cheese sandwich restaurants on wheels have also awakened a new passion of mine: creating my own grilled cheese sandwich. The more I experiment, the more amazing combinations I find, and the one I’m sharing here today is one of my definite winners: queso fresco and gouda, caramelized onions, jalapeño peppers and mustard. The perfect dinner, if you ask me.

Ingredients

  • 1 small white onion
  • 1 teaspoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 2 slices multigrain bread
  • 1 teaspoon mustard
  • 2 - 4 slices gouda cheese
  • 2 - 4 slices queso fresco
  • 1 jalapeño pepper, sliced

Directions

    Cut the onion in very thin slices.

    In a pan over low heat, melt the butter with the oil. Add the onions and sauté until they begin to brown, stirring occasionally.

    Add the sugar, and keep stirring until a caramel forms. Remove from the heat.

    Spread one side of the bread with mustard. Add the cheese and cover with the caramelized onion and the jalapeño slices.

    Put the other slice of bread on top and grill in a grilled cheese sandwich maker for 5-10 minutes, or until done.

Expert Tips

  • tip 1
    If you don’t have a grilled cheese sandwich maker, toast for 10 minutes in the oven at 350°F, with the top slice of bread on the side. Otherwise, you can make it in a skillet with some oil, pressing with a spatula. Turn once or twice.
  • tip 2
    You can cook the jalapeños with the onions for a milder effect. Or add more fresh jalapeños for a stronger effect.
  • tip 3
    To make your life easier, you can use only one kind of cheese for this sandwich instead of two. Most cheeses will go well with jalapeño peppers.
