Egg and Bacon Panini

Cristina Duffy Many think that egg recipes can only be served for breakfast. I like eggs so much that I can enjoy them at any time of day. However, this panini with egg and bacon is perfect for breakfast with a cup of coffee or orange juice, add a portion of fruit and you've got the perfect breakfast. It's a great way to prepare eggs in a new, tasty and easy way. Make paninis when you want to enjoy a meal that's a little out of the norm. Just combine the ingredients you like the most, serve with avocados or mayo and enjoy this simple snack. If you want a lighter version of this recipe, use turkey bacon and whole grain or sprouted grain bread.

Ingredients

  • 6 strips of bacon
  • 4 eggs
  • 1 teaspoon milk
  • Salt and pepper to taste
  • 4 large slices of bread
  • 4 slices of cheese

Directions

    Let the strips of bacon brown on a pan until they're crunchy.

    Remove the bacon and save some of the oil.

    Mix the eggs, milk, salt and pepper in a deep bowl.

    Whip and pour the mixture into the same pan you cooked the bacon in.

    Stir constantly and remove from the heat when they're ready.

    Use a grill or sandwich press to form the sandwiches. Place a piece of bread on the grill or sandwich press, cover with eggs, slices of cheese and strips of bacon.

    Cover with another piece of bread.

    Let the bread toast light and cheese melt.

    Cut the Panini in half and serve immediately.
