Brie and Peach Panini

If there is one thing I could never deny myself it would be bread. I love all types of bread and the more exotic, the better. Not only do I like eating bread, but I love making it too. I find the process of kneading and rising to be relaxing and therapeutic, but I know it's not like this for everyone and some prefer to purchase it already made. Fortunately, we have a large variety to choose from. As much as I love eating bread – with butter or cheese – I also love the idea of using bread as part of other preparations like sandwiches and paninis, just to mention a few. What makes a sandwich are the two slices of bread or one large piece of bread, so there are thousands of combinations to be explored using the ingredients you have at hand. Paninis are one of my favorite sandwiches and, to make it a complete meal, I like to add pieces of fruit. During this season, I like to use fresh, juicy and fragrant peaches with intense color to compliment the lightly melted cheese and candied onions, but use this as a base for you to use different combinations of fruits and cheeses. Imagine a panini with cheese and grapes, pears or apples. Even with cranberries or blueberries, slices of pineapple or guava paste. Delicious! Use a Panini press if you have one. Otherwise you can use a pan over medium-low heat. The result will be delicious.

Ingredients

  • 1 white onion, medium, cut into thin slices
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • 1 teaspoon honey
  • Salt and pepper
  • 1 loaf brioche (challah, peasant, etc.)
  • 2 ripe peaches, peeled and cut into slices
  • Brie cheese, cut into slices
  • 1/4 cup soft butter

Directions

    Heat a pan over medium heat. Add the onion and olive oil, sauté until the onion begins to change color. Add the vinegar and honey; stir frequently to prevent it from burning, but still browns a bit. Season with salt and pepper, lower heat.

    Cut the bread into 3/4 inch slices. Add layers of cheese to one piece of bread. Place slices of peaches on top of the cheese, covering the whole surface. Cover the peaches with candied onions and cover with the other piece of bread. Spread butter on the outside of the sandwich.

    Heat your panini press if you have one and cook the sandwiches until they’ve browned on the outside and the cheese has melted inside. Otherwise, heat a pan and medium-low and cook the sandwiches until they’ve browned. Flip and finish cooking.

    Cut in half and serve immediately.

Expert Tips

    If you don't have peaches, use slices of peaches or apples.

    Add 2 tablespoons of red wine to the onions so they turn a pretty red color.

    Use camembert or camozola instead of brie.
