This Bolivian soup with choclo (fresh corn) is called lawa. The name alludes to its somewhat thick consistency which is, without a doubt, substantial. This version of lawa with tomato, fava beans and corn is very traditional and calls for traditional ingredients of South America. It's easy to prepare and comforting in the cold of winter. I recommend it.

Ingredients

  • 5 cups Progresso™ Beef Flavored Broth
  • 1 onion, finely diced
  • 1 tomato, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 2 teaspoons aji panca (Peruvian red chili) paste
  • 2 cups Andean corn
  • Salt and pepper, to taste
  • 3 red potatoes, peeled and cubed
  • 2 cups Progresso™ Fava Beans

Directions

    Add broth, onion, oregano, cumin, tomato, ají panca paste and corn to a pot and cook over medium-high heat. Bring to a boil, reduce heat, and use a hand blender to process the ingredients until the soup is semi-thick. Taste the soup and salt and pepper to taste.

    Add the cubed potatoes and fava beans to the soup. Cook for 20 minutes or until the potatoes and beans are well cooked, over medium heat.

    Serve hot.
