Colombian Lentil Soup

Lentil soup is one of the most popular soups in Colombian homes and it’s one of my favorites. I like to serve this soup with white rice and avocado. This lentil soup is perfect for a cold winter day because it’s very comforting.

Ingredients

  • 2 tablespoons vegetable oil
  • 3 garlic cloves, finely chopped
  • 1/2 cup onion, finely chopped
  • 5 cups beef broth
  • 1 cup lentils, washed and drained
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and chopped into large pieces
  • 1 lb pork meat, cut into large pieces
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Chopped cilantro, to taste
  • White rice, to taste
  • Avocado, to taste

Directions

    Heat the oil in a large pot on medium low heat. Add garlic and onions and sauté for 5 minutes or until tender.

    Add broth, cover the pot and bring to a boil. Add lentils, carrots, potato, meat, cumin, salt and pepper. You can add more broth if desired. Cover the pot and bring to a boil. Reduce heat and cook for 35-40 minutes or until the lentils are tender.

    Once the lentils are ready, taste them and adjust the seasoning.

    Serve immediately with a little cilantro, a side of rice and avocado.

    You can use bacon, beef or chorizo instead of pork meat.
