Ingredients

  • 1 can (8 oz) refrigerated Pillsbury™ Butter Flake Crescent Rolls (8 Count)
  • 1 head broccoli, chopped
  • 2 teaspoons apple vinegar
  • 2 tablespoons Yoplait® plain yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • Pepper, to taste
  • 3 tablespoons chopped bacon or bacon bits
  • 2 tablespoons red currant

Directions

    Preheat the oven to 375° F.

    In a cupcake pan, roll out the Pillsbury™ Butter Flake Crescent Rolls dough triangles. Be sure to cover the bottom and sides of each cupcake mold.

    Bake the dough baskets for 10-12 minutes or until cooked and golden brown.

    Remove from oven and let rest.

    Steam the broccoli for 2 minutes. It should retain its bold, green color and be soft, yet crunchy on the outside. Once ready, pour into a container with cold water to stop the cooking process. Drain and put in a clean container.

    Mix the apple vinegar, yogurt, mayonnaise, honey, salt and pepper, to taste. Add the broccoli, bacon and red currants to dressing mix and stir to thoroughly combine.

    Cover the container with plastic wrap and refrigerate for 10 minutes.

    Fill the baskets with the broccoli salad and serve.

    If you can’t find red currants, use golden or dark raisins instead.

    Buy pre-cooked bacon bits to save even more time.
