Ingredients

  • 3 medium potatoes (about 1 lb), cut into 1 1/2-inch cubes
  • 2 cups ready-to-eat baby-cut carrots
  • 1 package (8 oz) fresh whole mushrooms, cut in half
  • 2 1/2 lb boneless skinless chicken breast or thighs
  • 1/2 teaspoon salt
  • 1 teaspoon dried chopped onion
  • 1/4 teaspoon garlic powder
  • 1 1/2 jars (12 oz each) chicken gravy (about 2 1/4 cups)
  • 1 tablespoon tomato paste
  • 1/2 cup dry white wine or water
  • 2 tablespoons chopped fresh parsley, if desired

Directions

    Spray 4 to 5-quart slow cooker with cooking spray. In slow cooker, toss potatoes, carrots and mushrooms. Arrange chicken on vegetable mixture. Sprinkle salt, dried chopped onion and garlic powder over chicken.

    In small bowl, stir gravy and tomato paste. Pour gravy mixture and wine into slow cooker.

    Cover; cook on Low heat setting 8 to 10 hours. Sprinkle each serving with parsley.

    Look for tomato paste in tubes, sold near the canned tomato paste. It comes in handy when you need a small amount for a recipe, like the 1 tablespoon used in this stew.
