Ingredients

For cherries jubilee topping:

  • 1 (15 oz.) can whole cherries in juice
  • 1/2 cup sugar
  • 1/2 tablespoon cornstarch
  • 1/4 cup kirsch (fruit brandy), room temperature

For French toast:

  • 1/4 cup flour
  • 1 cup of milk
  • 3 eggs
  • 1/2 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 8 slices of Texas toast bread
  • 1 tablespoon butter
  • 1/4 cup powdered sugar

Directions

    In a small skillet, pour juice from canned cherries and warm over medium heat. Slowly add sugar and cornstarch and whisk until combined. Add cherries and cook for 2 minutes.

    Remove from heat and pour in fruit brandy. Flame pan to burn off alcohol and set aside.

    In a large mixing bowl combine flour and slowly add milk, eggs, cinnamon and vanilla. Whisk until smooth and set aside.

    In medium skillet, melt butter over medium heat. Dip bread into egg mixture and flip to soak both sides. Place soaked bread on buttered skillet. Cook each side until golden brown. Serve hot and top with cherries jubilee and powdered sugar.

    You can use also use cognac or rum in place of kirsch.
