Cauliflower and Cheese Breadsticks

I made these cauliflower and cheese breadsticks last week and I loved them. They are a good alternative to traditional breadsticks or garlic bread, and they’re delicious. Since they’re so versatile, you can serve them as an appetizer, as a side dish, and you can even send them in your children’s lunchboxes. My kids love it, and I’m sure you’ll also love their delicious flavor and the benefits provided by the cauliflower. Try them out and let me know what you think.

Ingredients

  • 1 head of cauliflower, stemless, washed
  • 1 egg
  • 1/2 cup mozzarella cheese, grated
  • 1 teaspoon basil or oregano
  • 1/4 teaspoon black pepper
  • 1 pinch of salt

Directions

    Preheat the oven to 400 °F. In a food processor pulse the cauliflower until you get a rice-like texture. Transfer the cauliflower to a baking dish and bake for 20 minutes.

    Take the cauliflower out of the oven and transfer to a bowl, discarding the liquid. Let it cool down.

    Add the egg, 1/2 cup cheese, basil, oregano, black pepper and a pinch of salt. Mix all of the ingredients.

    Once again, place the cauliflower mix in a baking tray lined with wax paper. Pat the cauliflower down with your hands to make a rectangle.

    Bake for 18 minutes at 400 °F, take the tray out of the oven and sprinkle the cauliflower with the remaining 3/4 cup of cheese.

    Bake for another 5 minutes until the cheese is golden brown. Cut into 12 breadsticks. Serve them hot with marinara sauce.
