My brother and I used to give my mom a hard time with cauliflower, so my mom began experimenting with different recipes to find one that we would actually eat. One recipe was finally a winner among her countless inventions, and today, I’d like to share it with you. The cauliflower is tender and crunchy, covered in a delicious sauce and tons of melted cheese. What kid doesn’t like cheese? It’s an irresistible combination! Serve with meats or soups, or for lunch with a slice or two of garlic bread.

Ingredients

  • 1 medium-sized cauliflower (approx. 1 lb)
  • 2 cups water
  • 1 tablespoon olive oil
  • 3 large tomatoes, washed and diced
  • 1/2 white onion, finely chopped
  • 1 jalapeño, washed, deveined and finely chopped
  • 1/2 tablespoon salt
  • 1/3 cup plain Progresso™ bread crumbs
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup shredded Monterey Jack cheese

Directions

    Separate the cauliflower in small florets.

    Add water to a boiler and steam the florets for 8-10 minutes, until tender yet crispy.

    Preheat the oven to 400° F.

    While steaming, prepare the salad.

    Heat the oil in a wide saucepan and fry the onion for a few minutes. Add the tomato, jalapeño and salt, and cook for an additional 5 minutes until the tomatoes are bland and pale red. Turn off the stove and let rest.

    Arrange the cauliflower florets in an oven-safe dish. Cover with 3/4 of the sauce. Sprinkle with a layer of bread crumbs, a layer of the two cheeses, and a top layer with the remaining sauce.

    Bake for 10 minutes or until the cheese is golden brown and completely melted.

    Serve immediately.
