Croquettes are a traditional Spanish recipe and also very popular in Latin America. Prepared by our grandmothers and our mothers, they’re a delicious dish that we should preserve and pass on to our children. Today, I'd like to share with you a recipe for caramelized onion and artichoke croquettes. The texture is marvelous and the taste, exquisite. Enjoy them as a vegetarian dish, as an appetizer, or as an accompaniment to any meal. There's no excuse not to try them!

Ingredients

  • 4 1/2 lb mashed potatoes
  • 4 tablespoons butter, melted
  • 1 white onion, sliced thinly
  • 1 cup artichoke hearts, chopped
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • Oil for frying

Directions

    Put 2 tablespoons of butter and the onions in a pan over medium heat and cook for 5 minutes, stirring frequently until golden.

    Place the mashed potatoes in a container along with the caramelized onions, arti-chokes, the rest of the butter, milk, salt, and pepper. Mix well.

    Form the croquettes and dip them in the eggs and then the breadcrumbs.

    Heat oil in a pan and, when hot, drop in the croquettes. Cook for 5 minutes or until golden.

    Remove and place on a paper towel to dry.
