Bacon-Wrapped Feta Chicken with Tomato and Basil

There’s no denying it: everything tastes better when wrapped in bacon! Once my family has had their fill of our standard arroz con pollo, I like to pull out this bacon-wrapped feta chicken with tomato and basil recipe to change things around a bit. A great oven-to-table recipe for guests and family dinner alike, this bacon-wrapped recipe will wow your guests and make you look like a gourmet cook. But it is actually as simple as it gets! Make a great tasting tomato sauce with fresh basil and let the bacon do the rest. Serve in a pretty oven-proof baking dish and you’ll be showing off!

Ingredients

  • 8 boneless, skinless chicken thighs
  • 8 oz package feta cheese, sliced
  • 8 slices bacon
  • 4 tablespoons basil, plus 8 leaves reserved
  • 2 tablespoons olive oil
  • 2 garlic cloves, chopped
  • 16 oz can tomatoes, crushed
  • Salt and pepper, to taste

Directions

    Preheat oven to 375°F.

    On a clean surface, open chicken thighs and stuff with a slice of feta and 1 reserved basil leaf. Gently close each side of the chicken over each other. Wrap 1 bacon slice around the stuffed chicken, beginning at one end of the chicken, until it is completely wrapped. Use a toothpick to secure if needed. Place on oven-proof baking dish.

    Repeat this step until all chicken thighs have been stuffed and wrapped.

    In a saucepan, heat olive oil and medium heat. Add garlic and tomatoes. Cook over medium heat, stirring occasionally, for about 10 minutes or until the sauce begins to thicken. Add remaining basil and stir to incorporate.

    Once done, spoon sauce over bacon-wrapped chicken thighs, making sure every piece is coated. Cook in oven for 30-40 minutes, or until done.

    Serve immediately.
