Angel Food Cake with Fresh Fruit

Without a doubt, one of my favorite childhood dishes is the pastel blanco or angel food cake that my mom used to prepare on special occasions. And since Father's Day is a special occasion, it wouldn’t be complete without a delicious piece of cake! This recipe is very simple and hassle-free; overall, moms have to be practical too and use our tricks to make life in the kitchen easier. Make sure to ask the children in the house to help garnish this delicious cake. Let's cook!

Ingredients

  • 1 box of angel food cake mix
  • 2 egg whites
  • 1/2 cup of milk or water
  • 1 pint of fresh cream to whip
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla
  • 1/2 cup of fresh blackberries
  • 1/2 cup of fresh raspberries
  • 3 or 4 fresh large strawberries
  • Mint leaves for garnish

    Follow the directions to prepare the cake and bake it. When it is ready, take it out of the oven and allow cooling.

    To prepare the whipped cream, it’s important to put the fresh cream in the freezer for 15 minutes along with the bowl and the whisk. When they are cold, take them out of the fridge, open the cream container and add the cream into the cold bowl.

    Whip at high speed for a couple of minutes. Lower the speed and gently add sugar, mixing well. Finally, add vanilla and whip for one more minute.

    Take the cake out of the mold and put it on a big plate. Cover the cake with the cream and garnish with fresh fruit. Keep the cake in the fridge until it you are ready to serve.

    To prepare a perfect whipped cream, place the utensils and the cream in the freezer for at least 15 minutes. Do not whip the cream too long or else it will attain the consistency of butter. You can serve the cake with vanilla ice cream.
