Zucchini Latkes

Latkes are salty patties that are usually prepared with potato and served with applesauce. They're traditionally served for Hanukkah and Passover. Latkes can also be prepared with many other vegetables like sweet potato, broccoli, cauliflower and zucchini. My favorite is zucchini, so I always prepare my latkes with grated squash and Serrano peppers to give them a Mexican touch. Zucchini latkes are crunchy on the outside and soft inside and they're perfect for a light lunch.

Ingredients

  • 4 cup of grated squash
  • 4 tablespoons of flour
  • 2 eggs
  • 2 tablespoons of white onion, finely chopped
  • 1 Serrano pepper, finely chopped
  • Vegetable oil
  • Sour cream

Directions

    Use your hands to strain the excess water in the grated squash.

    Mix the squash, flour, eggs, onion and Serrano pepper in a medium bowl and season with salt and pepper to taste.

    Heat 2 tablespoons of vegetable oil in a nonstick saucepan over medium heat. Pour 1/4 cup of the mixture into the saucepan to make 1 latke. Cook for 2 minutes or until browned. Flip and cook for another 2 minutes. Depending on the size of your pan, you can prepare 3 or 4 latkes at a time. Repeat these steps with the remaining mixture.

    Serve with sour cream or you favorite sauce.

    To keep the latkes warm while you finish them up, place them in a casserole and bake at 200°F.
