Yucca Pancakes and Cilantro Aioli

These delicious yucca pancakes are one of my family's favorite dishes! They're so good that I usually make a second batch so I have some left over for the next day. The best thing about them is that they're so easy to make and they go with any kind of meal. My kids like when I add butter and fresh cheese on top. Go ahead and make them, you'll love them!

Ingredients

Yucca Pancakes:

  • 1 pound of yucca, cooked and deveined
  • 1/2 cup chopped onion
  • 1 garlic clove
  • 3 tablespoons of yucca flour
  • Salt to taste
  • 1/4 cup cilantro leaves
  • 1/4 cup vegetable oil
  • 1/4 cup wheat flour

Cilantro Aioli:

  • 1 cup mayonnaise
  • 1/2 cup cilantro leaves
  • 2 tablespoons fresh lime juice

Directions

    Place the yucca, onion, yucca flour, salt, and cilantro leaves in a food processor and pulse several times until everything is well-mixed. The end product will be a sticky paste.

    Heat the oil in a nonstick pan over medium heat.

    Flour your hands and form the yucca pancakes. Make them any size you wish.

    Fry the pancakes, in batches, until they are golden on both sides, about 2 minutes per side.

    To make the cilantro sauce: place the mayonnaise, cilantro, and lime juice in a small food processor. Process until everything has been well mixed.

    Serve the pancakes with the cilantro sauce.
