Yucca chips are perfect for serving with different sauces, dips, or with any type of grilled meat. Just cut the yucca into slices and fry or bake them. Serve them with a shrimp dip for a huge hit!

Ingredients

  • 2 lb fresh yucca (cassava)
  • 4 cups vegetable oil
  • Kosher or sea salt
  • 1 lb small shrimp (Titi shrimp)
  • 8 oz whipped cream cheese
  • 2 tablespoons chives
  • 1 jalapeño, finely chopped (optional)
  • 2 tablespoons mayonnaise
  • 1 teaspoon olive oil

    You’ll need a mandolin to slice the yucca finely and evenly. If you don’t have a mandolin, you can cut it by hand into slivers (like French fries).

    Peel the yucca using a vegetable peeler, removing all the waxy parts and the skin. Finely slice the yucca using a mandolin or a potato peeler.

    Heat the oil over medium-high. The oil should be hot. Add a handful of yucca and fry until golden brown. Remove and place them over paper towels. Immediately sprinkle with the salt of your choice. Allow to cool completely before serving.

    To prepare the shrimp dip, mix the mayonnaise and olive oil with the whipped cream cheese. Add the chives, jalapeño, and shrimp. If the shrimp are too big, cut them in half. Mix well and serve with the yucca chips.

    If you like, substitute the shrimp with canned tuna or smoked salmon, or with canned chicken breast.
