Whole Grain Pasta with Pesto

In my years as a vegetarian, there's one recipe that I enjoyed very much: pasta with pesto. On one hand because it was an easy recipe to prepare, and on the other because it's super deliciosa. It's also ideal on cold days or during the winter season since it's a hot dish with intense aromas such as those of garlic and fragrant basil. This time, I've prepared this recipe using whole-grain spaghetti. Whole-grain pasta is an excellent option, and when combined with different sauces and ingredients it's as flavorful if not tastier than traditional pasta. It’s an option that your kids will also love when they see the pasta is a different color. I’m sharing a recipe below that is so easy to put together, my 12 year old son already knows how to make it on his own. Enjoy!

Ingredients

  • Salt, to taste
  • 5 garlic cloves
  • 1 handful fresh basil
  • 1 teaspoon oil
  • 1 4-oz stick butter
  • 1 package whole-grain pasta, such as spaghetti
  • Grated cheese, to taste

Directions

    Put a large pot of water on the stove to boil, and add salt, to taste.

    Chop all the cloves of garlic and the basil.

    In a small pot, melt the butter over medium heat.

    Once melted, add the garlic and basil and stir with a wooden spoon for 5 minutes. Turn off burner and be careful not to burn the butter or garlic.

    Once the water in the large pot is boiling, add the whole-grain pasta. Cook until al dente.

    Once cooked, strain. Pour the pasta into a serving bowl and mix with the pesto.

    Serve, and sprinkle each portion with some of the grated cheese.
