My family loves Christmas punch, especially my husband. This recipe is fabulous, not only because it’s made with delicious ingredients, but also because it’s so easy to make. If you want, you can omit the liquor so that the family whole family can enjoy it, including the kids.

Ingredients

  • 1 cup cashews raw
  • 2 cups water
  • 1 can (15 oz) coconut milk
  • 6-8 dates, seedless
  • 1 teaspoon vanilla extract
  • 1/2 cup rum (optional)
  • 1/2 teaspoon kosher salt
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon xanthan gum

Directions

    Place the cashews in a bowl and cover in water. Let soak for 30 minutes. Strain and serve.

    Add all the ingredients to the blender and combine until it has an even consistency without lumps, about 3 minutes. Serve and enjoy!

    Keep refrigerated, preferably in a glass bottle with a lid, up to 5 days.
  • tip 2
    The xanthan gum is used to thicken the mixture: you can find it at any supermarket where they keep the gluten free flours.
