I love the versatility of quesadillas: you can create something different each time you prepare them, since there’s no limit to the different kinds of fillings you can make, combining different ingredients along the way. Ingredients

To prepare the cranberry sauce:

  • 3 cups cranberries
  • 1/2 cup orange juice
  • 1/2 cup sugar

To prepare the quesadillas:

  • 4 large flour tortillas
  • 3/4 cup shredded cheddar cheese
  • 2 cups cooked, shredded turkey
  • 4 tablespoons cranberry sauce
  • 1 tablespoon fresh sage, chopped

Directions

    To prepare the cranberry sauce: Put the cranberries, orange juice and sugar in a medium-sized pot and bring to a boil over medium heat. Reduce to low heat and cook until the cranberries burst and the sauce begins to thicken, for about 10-15 minutes.

    To prepare the quesadillas: Heat a frying pan over medium heat.

    Set a tortilla on your work surface and cover with the cheese, turkey, cranberry sauce and sage, and cover with another tortilla.

    Cook the quesadilla until golden brown and the cheese has melted, about 2-4 minutes each side.
