Pilar Hernandez During the summer months, fruits are a must for my desserts, and a very traditional dessert that goes very well with fruits is tres leches (three milks cake). This one is not only delicious, but also very convenient. You can prepare it a couple of hours in advance and its flavor will only get better.

Ingredients

For the cake:

  • Non-stick baking spray
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 8 oz butter, at room temperature
  • 1 cup sugar
  • 5 eggs, at room temperature
  • 1 1/2 teaspoons vanilla
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) condensed sweetened milk
  • 1/2 cup heavy cream
  • 2 cups blueberries
  • 2 cups kiwi, peeled and sliced
  • 2 cups mango, peeled and cut into small cubes
  • 2 cups sliced strawberries
  • Whipped cream to decorate (optional)

    Preheat the oven to 350°F.

    Grease a round baking dish (the same diameter as your cup) with non-stick baking spray. Eight inches is the most common.

    Combine the flour, salt and baking powder in a bowl.

    In another large bowl, whisk the butter at high speed until creamy and pale, 2 minutes. Add the sugar and whisk for 3 minutes at medium speed. One by one, incorporate the eggs, and continue whisking until well combined. Add the vanilla and whisk for another 2 minutes.

    Add half of the flour mixture and whisk at medium speed until well incorporated, then add the other half and continue whisking until you have a homogeneous mixture. Pour into the greased baking dish.

    Bake for 35 minutes or until it no longer sticks to the edges, is golden on top and a toothpick inserted into the center comes out clean.

    Let cool on a rack for 30 minutes. Use a fork to make multiple holes in the cake so that it later absorbs the milks. Let it cool completely and unmold the cake. Cut into 3 equally-thick layers.

    Prepare the milk mixture. Combine the evaporated and condensed milks and the cream in a medium bowl. Beat with a fork until well combined.

    To assemble the cup, place a first layer of blueberries, then a layer of cake and coat with 1/3 of the milk mixture. Do this slowly to allow the cake to absorb it. Place the kiwi, another layer of cake and coat with another 1/3 of milk. Continue with a layer of mango, the last layer of cake, the rest of the milk mixture and finish with a layer of strawberries.

    Let rest in the refrigerator for 2 hours before serving. Add whipped cream and more blueberries on top if desired.

    This delicious dessert can also be serve as individual portions, all you have to do is cut cake circles into the same diameter as the size of your container.

    You can make the cake up to 3 days prior to assembling your cup. Keep refrigerated in the baking dish.

    You can use other fruits that won’t discolor quickly, like pineapple, raspberries, papaya or blackberries.
