Tostones with Shrimp and Cilantro Pesto

Tostones are a basic Latin American dish. In Colombia we eat them as appetizers with sauces or different toppings. They also make a great side for a number of different dishes, especially fish and sea-food. Ingredients

  • 3 green bananas
  • Oil for frying
  • Salt
  • 24 large shrimp, cooked

Cilantro Pesto:

  • 1 cup fresh cilantro
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup walnuts
  • Salt to taste
  • 1/2 cup olive oil
  • 1 small tomato, chopped
  • 1 tablespoon chopped fresh cilantro for garnish

    To prepare the pesto: blend the cilantro with the garlic, vinegar, parmesan cheese, nuts and salt. Add 1/4 cup of olive oil and blend again. Add more olive oil until the pesto reaches the consistency you prefer. Mix the pesto with the shrimp and set aside in the fridge until you're ready to serve.

    For the tostones: Peel and cut the plantains into 2 inch pieces.

    Heat a pan with oil over medium-high heat. Fry the plantains on both sides for about 3 minutes or until they've lightly browned. Remove from the pan and flatten with the help of a tostonera. Fry again on both sides until they've browned.

    Place the tostones on paper towels. Transfer to a large dish and add 2 shrimp with pesto to each tostón. Add tomato and fresh cilantro to decorate.

    If you don't like shrimp, you can prepare this recipe with shredded shrimp and cilantro pesto.
