There are those days when simple, quick recipes are a blessing. I always try to keep a few basic ingredients stocked in my pantry in case I need to make something easy and quick when I'm in a pinch. Vegetables are one of those ingredients because they are perfect for making shakes, salads and sauces. One of the sauces that I love to make is this tomatillo and cilantro sauce. It's very easy to make as it can be prepared with just those two ingredients, and the tomatillos give the sauce a nice, smoky flavor. I normally serve it with a side of quesadillas, chips or chicken breasts.

Ingredients

  • 4 tomatillos
  • 2 handfuls of cilantro

Directions

    Brown the tomatillos in a frying pan with a little bit of oil.

    Once they have browned, cut them in half and add them to the food processor.

    Process until they have the desired consistency.

    Serve!
