Today I decided to put a twist on one of my favorite desserts: brownies! I love the taste and smell of my coffee and the soft, moist taste of brownies. This time, I decided to combine the two and I made myself a treat with an added Italian twist. They are very easy to make and you can have them in your hands in less than an hour. So delicious!

Ingredients

  • 1 box Betty Crocker™ Fudge Brownie Mix
  • 1/4 cup water
  • 2/3 cup coconut oil or vegetable oil
  • 2 eggs
  • 8-oz mascarpone cheese
  • 8-oz cream cheese
  • 1/4 cup of sugar
  • 4 egg whites
  • 2 tablespoons vanilla extract
  • 1 package ladyfingers (approximately 24 ladyfingers)
  • 1 cup brewed coffee
  • 1 cup almonds, slivered or chopped
  • Cinnamon

Directions

    Preheat oven to 350° F. Combine brownie mix, water, oil, eggs and almonds in a large bowl with a spatula until well blended. Pour into a greased 9 x 13 pan. Place a layer of ladyfingers on top of brownie batter.

    In a separate large mixing bowl, place mascarpone cheese, cream cheese, sugar, egg whites, and vanilla. Mix until smooth. Using a brush or spoon, soak the entire layer of ladyfingers with coffee.

    Spread the creamy topping over the soaked ladyfingers. Sprinkle with cinnamon and garnish with almonds.

    Bake for 45 minutes. Let cool at room temperature before serving.
