Pilar Hernández This pie will make everyone happy! Some in my family like sweet potato pie, others look forward to having apple pie and then we have my daughters, who just love meringue. So I'm forced to make this pie every year and the combination is simply delicious. It has different textures and many comforting flavors. Try it this year!

Ingredients

Dough

  • 1 1/4 cups Gold Medal™ All-Purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 8 tablespoons unsalted butter, at room temperature
  • 1/4 cup ice water

Sweet Potato Filling

  • 2 lb fresh sweet potato purée or 2 cans (15 oz each)
  • 1/3 cup light brown sugar
  • 2 eggs
  • 1/4 teaspoon grated nutmeg
  • 1/2 teaspoon cinnamon powder
  • 3/4 cup evaporated milk
  • 1/4 teaspoon salt

Apple Filling

  • 3 red apples
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon powder

Marshmallow Meringue

  • 3 egg whites
  • 1/8 teaspoon salt
  • 1/4 cup sugar
  • 1 jar (7 oz) marshmallow cream

Directions

    Prepare the dough: Combine the flour, salt and sugar in a large bowl. Stir with a fork and add the butter (cut into small chunks). Mix everything together until you have a sandy consistency and all the flour has been combined with the butter. Gradually add the water, which should be very cold. Stir until you have a dough. Don’t knead it. Once it becomes a dough, wrap in plastic and refrigerate for at least 30 minutes.

    Preheat the oven to 375°F.

    Use a rolling pin to extend the dough on a floured surface until you have the right diameter to line your pie pan. Fold into 4 and transfer to the pan. Place a layer of beans on the bottom to keep the dough from puffing up while it cooks. Bake for 10-12 minutes, until it’s slightly golden brown.

    Prepare the sweet potato filling: Place all the ingredients in the food processor and pulse until everything is incorporated.

    Place the sweet potato filling over the pre-baked dough and bake for 50 minutes or until the mixture is firm.

    Let it cool on an oven rack for 2 hours or overnight.

    Preheat the oven to 400°F.

    Peel and cut the apples into pieces or slices. In a large skillet, melt the butter over medium-high heat. Add the apples and cinnamon and let it cook for 8-10 minutes until lightly cooked, not soft. Arrange a layer of apples over the sweet potato pie.

    Prepare the marshmallow meringue: With a whisk, beat the egg whites and a pinch of salt at high speed until foamy. Lower the speed to medium and add the sugar in a steady stream. Increase the speed to high and continue beating for about 5-8 minutes, until the meringue is white and silky.

    In another large bowl, combine 1/3 of the meringue with the marshmallow cream, stirring in a circular motion. Add the rest of the meringue and use a spatula to mix everything together thoroughly and gently.

    Use a pastry bag to distribute the meringue mixture over the pie. Bake for 4-5 minutes until the edges of the meringue are golden brown. Keep an eye on it at all times, as it can burn in a matter of seconds.

    Let it cool prior to slicing, and serve.

Expert Tips

    To make the sweet potato purée, wash the sweet potatoes, poke several times with a knife and bake at 375°F for 60-75 minutes, until you can easily pierce through with a fork. Let it cool.

    You can buy the dough and bake it according to package directions.

    You can make the dough and bake it up to 2 days prior to serving.

    You can make the pie the day before; keep it refrigerated and covered.

    If you wish, you may add more spices, replace some, or add cardamom or ginger, depending on your family’s preference.
