Ingredients

  • 1 1/2 lb sweet potatoes
  • 1 lb potatoes
  • 3 tablespoons sunflower seed oil
  • 1 cup chopped onion
  • 1 1/2 cup turkey breast
  • Salt and pepper, to taste
  • 6 eggs

Directions

    Wash and dice both kinds of potato into small pieces. Cook over medium-high heat for about 10 minutes. Remove from the pot and drain.

    Heat the oil in a large frying pan over medium-high heat. Add the onion and cook for 1 minute, stirring to avoid burning.

    Add the turkey and season with salt and pepper, to taste.

    Add the potatoes and stir-fry for 5-8 minutes.

    Serve with fried eggs.

    You can swap out the white potatoes for 2 medium-sized Yukon Gold potatoes, if desired.
