Sweet Pea Pesto

My kids have a song book and one of their favorites in the collection is called "Lonely Peas." The story is told by a boy that doesn't want to eat his peas, which he consequently leaves on his plate when he's done eating the rest of his supper. I couldn't be caught singing this song because I love sweet peas. They bring back fond childhood memories of my mom and grandmother who were always adding peas to white rice, which we ate regularly at least three or four times a week. They also added peas to different salads, broths and meat dishes. For some reason my kids, on the other hand, resist eating them whenever served whole. They do, however, like pesto. So I decided to go for it! And that's how my sweet pea pesto was born. This pea pesto is super easy to prepare, it calls for just a few ingredients and takes a couple minutes to whip up. Everyone in my family ate it without putting up a fuss. It's delicious for snack time spread over crostini or baguettes. You might also try adding it to other dishes such as pizza, poured over fish or meats, or served with pasta.

Ingredients

  • 1 (9-oz) package frozen baby sweet peas
  • 2 garlic cloves
  • 2 oz cashews
  • 2 tablespoons olive oil
  • 3 tablespoons Parmesan cheese
  • 3 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 6 coriander sprigs (use whole sprig)

Directions

    Steam the sweet peas according to package instructions.

    Combine the cooked sweet peas and all the other ingredients in a food processor and puree until the mix is smooth and uniform.

    Spread on crostini as a snack. You can also pour it over fish or pasta.

    Store any leftovers in an airtight container in the refrigerator for up to 4 days.

    You can use parsley in place of the coriander, and walnuts in place of the cashews.
