Summer salads are one of the most appetizing dishes of the season. Without the need to spend much time on preparation or many ingredients, you can obtain great results that everyone will like. Here, in-season vegetables are mixed to perfection with tuna and pasta. It's a refrescante option that will satisfy even the most voracious of appetites. Which other ingredients would you add?

Ingredients

  • 5 cups short pasta, such as rotini, farfalle or macaroni
  • 2 eggs
  • 2 cups Muir Glen™ organic whole peeled tomatoes
  • 1 garlic clove, finely diced
  • Fresh basil leaves, to taste
  • 2 tablespoons olive oil
  • 1 can tuna
  • 1 cup bell pepper, diced
  • Salt and pepper, to taste

Directions

    Start by preparing the pasta according to the package instructions. When ready, drain, rinse and set aside.

    Next, prepare two hard-boiled eggs. When cool, peel and cut into quarters. Set aside.

    In a deep bowl, shred or tear the tomatoes apart and add the diced garlic.

    Afterward, add the olive oil, basil leaves, salt and pepper to the tomatoes.

    Then open the can of tuna and break the meat into pieces with help of a fork. Combine the tuna with the tomato mixture.

    To serve, place the pasta in a salad bowl with the tomato mixture on top. Sprinkle the diced bell peppers over the whole salad.

    Garnish with a few pieces of hard-boiled egg and some basil leaves. Eat at room temperature.
